Chicken Upsala

´Tis not the meat, but ´tis the appetite
Makes eating a delight.

Chicken Upsala
­ A Recipe ­

1 CUP Macaroni

4 TBS Butter

4 TBS Flour

¼ CUP Chopped Shallot

1 CUP Milk (or Cream)

1 CUP Chicken Stock

½ CUP Grated Parmesan Cheese

½ CUP Fine Chopped Ham

2 CUPS Cooked Chicken Meat

1 Box of Bread Crumbs

  1. Cook macaroni ­ set aside.

  2. Melt butter in a double boiler. Add shallots.
    Cook briefly.

  3. Add flour, stirring well.
    Add milk (or cream) and chicken stock.
    Stir until thickened.

  4. Add parmesan cheese, ham and chicken.

  5. Mix with macaroni.
    Pour into buttered casserole.
    Top with bread crumbs.

  6. Bake at 350° for 45 minutes.

Serves 4 to 6
